Its to do with the sympathetic nervous system and the release of adrenaline from the adrenal gland. That causes the feeling, cos when u see someone who you like, your body releases adrenaline as part of the fight or flight response, so basically, whether you are going to talk to them or do a runner.

Generally something I'm really looking forward to, my tummy is lurching and flipping right now in anticipation of meeting my cousins again after 25 years, off to Oz in a few weeks to see them and goodness knows what state my old lurching tummy will be in by the time we land in Melbourne.
