I was just wondering, I have always wanted that experience, just to have it, but I'm not exactly sure to tell if girls or lesbians or not if they aren't all that open about it.

Have you tried asking around to see if they are?
Either way, you might want to just ask them yourself in a joking sort of way if nothing else seems to be working for you?

If you see her get cozy with both roosters and hens, she's probably bi.
If she only snuggles up with other hens, she could just be young (roosters aren't very cuddly), or she could be lesbian.
