Look up Mel Brooks. He directed and starred in several parody movies. I haven't seen all of them but the ones I have seen are hilarious.
Space Balls - parody of Star Wars and Star Trek
Robin Hood: Men in Tights - parody of the legend
Blazing Saddles - parody of Westerns
High Anxiety - parody of Hitchcock
There are several more, but I haven't seen them yet.

The Scary Movie and other movies from the same people are merely examples of parody movies. They are quite far from 'good' examples. For those, you will have to see the Mel Brooks movies that ModelFly listed.
