Nothing really, they are all digital music players. An iPod requires that you use iTunes exclusively to manage your iPod and with other players there are several ways to manage it.
Ipods are all the rave cause of all the hype they carry and their huge market share. But as I type this other music players are coming on the market that will rival some aspects of the iPod. Only thing they will never have is iPod's patented click wheel.

The Difference is that ipods are made by apple and there are crap and MP3 players are made by IBM and thy are the best.
