I'm interested in knowing how teachers are using self-publishing wiki platforms like PBWiki or WetPaint as a classroom collaboration tool.

Wikipedia is a whole other question.... ;-)

The High School Online Collaborative Writing Wiki at schools.wikia.com is being used by a lot of schools for various projects where children are learning about collaborative writing. The wiki is openly editable to any teacher can use the site to create their own project for their class.

Have a look at what the East Side Community High School in New York are doing there for some ideas: http://schools.wikia.com/wiki/East_Side_Community_High_School%2C_NYC

We use Google Docs as a wiki at our Irish college [http://www.tippinst.ie] and have discovered that we need to use a proper wiki to ensure more than 10 students can collaborate simultaneously.

Wikis can be useful because they allow you to pull together the knowledge of a group of people, like a classroom of students. Of course, the downfall is that at any given moment some of the information on it could be unreliable.

If you're talking about wikipedia, no we don't use it. The reason why is because some of the information is not correct and I teach a history class so I don't want to get the wrong information.
I do like that its convenient to use though...
