Most countries do speak English. England is a nice place to go, but can be a bit on the expensive side. The same goes for Scotland. Germany is a good place to go. It is relatively reasonable, and the people are nice, they speak English, and the busses will take you anywhere you want. There is a lot of history to see in Germany as well. In France, most people just speak French, and you have to pay to get a subway ticket each way. Switzerland is also great, but extremely expensive. Italy is wonderful, but still pricey. Spain (the northern half) is goregous, however, mostly Spanish is spoken, but well priced. Austria is the same as Germany, but a smaller country and easier to navigate. Greece is beautiful, but very poor, and some places don't speak a lot of English.

Germany, Austria, Switzerland, Norway, Sweeden, Greece, Italy Spain. The best way to trave is to get a multiple country eurail pass. Travel by night. Southern countries will be warmer. Greece is awesome, I lived there for 2 years. Go to Athens and one of the islands.
Germany, I am from there and I visit as often as possible. The problem you will have is that there is so much to do and see in every country that it will be difficult to choose.

If you are interested on sea-beach combination, go to Greece. They all speak english, the islands are great, it is totaly safe to travel alone and eating out is not expensive (drinking however could be, but of course nothing to compare with England or Skandinavia). You can also combine it with cultural activities.
If you prefer sightseeing and cities touring, try to combine more countries, like Spain, Germany, Italy

First stop England. Lot of history and London nightlife is great.
Germany. Beer. Need I say more. The country side is awesome in the summer and you can stay at a BB in small towns and get wonderful treatment.

Ireland!! my sister traveled there and she said people were really outspoken and friendly. Plus, they speak english! Things were pretty cheap there too she said. Foods are affordable and things there are sold at a relatively low price compared to its neighboring countries.
hope you have a nice trip!
edit:
I've been to sweden and germany and really nice place. but things are too expensive!! you might want to consider other ones if you're looking for a more suitable and affordable country to visit.

I 2nd Romania, it is beautiful and cheap. You have ski resorts, the black sea and Bran (Dracula's) castle., there are other castles as well. English is also spoken by a lot of the younger people so I've heard that there is not much of a language barrier.

I highly recommend Czech Republic. Prague, you can't resist that beautiful capital city! If you want more than just that, then I suggest Austria (try Vienna), and Republic of Slovakia (try Bratislava).
Hope this helps.
