I always wanted three, but it's really hard to know until you start having babies. I have one daughter now and will be trying soon for a 2nd, but I just take it one baby at a time.

When we got married we decided on 3. A little further down the line it went to 2.
We had our son. We had a daughter (who died at birth) and then we had another daughter.
So, in reality, we did end up having our 3 we originally wanted. We just have 2 here with us on earth and 1 watching from above.

Its hard to say. If only you can also predict the gender too. I wanted 2 boys and 2 girls=4 but I have 3girls and 1boy.

2, because one will be really spoiled but three or more might be too much to handle financially and emotionally. I want to be able to spend time with my children, not have too many and then wonder how am I going to make sure they all feel loved...
