What's an easy, secure way to encrypt stuff on my USB Flash Drive for free. I need something that simply asks for a password to access the file/folder

Free open-source disk encryption software for Windows XP/2000/2003 and Linux
Main Features:

* Creates a virtual encrypted disk within a file and mounts it as a real disk.

* Encrypts an entire hard disk partition or a storage device such as USB flash drive.

* Encryption is automatic, real-time (on-the-fly) and transparent.

* Provides two levels of plausible deniability, in case an adversary forces you to reveal the password:

1) Hidden volume (steganography – more information may be found here).

2) No TrueCrypt volume can be identified (volumes cannot be distinguished from random data).

You can use freeware to password protect the files or folder in USB flash drive.
I recommend you to use TrueCrypt or USB security.
They are both freeware and good at password protecting external hard drives including flash drive.
TrueCrypt will encrypt the files in your flash drive that your files will be under strong protection, but the encryption process is a little bit comlicated.

USB security is easier to use, it needs no installation, you can just copy the client into your flash drive and then run it to set a password for files on the drive; while this program uses normal protection technology, and it can only protect files from average computer users' accesses.

Assuming that the USB drive doesn't have encryption by default (some of the newer ones do), you'll need something like PGP to encrypt the files prior to putting them on the drive.

Sounds odd. Enabling 'show hidden files and folders' should do the trick. Try accessing your flash drive via the Command Prompt (Start->Run->cmd), enter your drive letter (e.g. f:), then type 'dir'. That might show them.
