I went to a sale near where I live. An older man was there selling bunnies and rabbits. Most of them were larger lops. My daughter was having fun watching them. I asked the man if they were pets. He said "Some people buy the lops for pets, some people eat them too." I know that there are rabbits bred for food, but I never considered a lop to be one of them. Do people slaughter/eat lop rabbits?!?

There are several different types of "meat" rabbits and large lop ears are one of them. So are Angoras, New Zealands, California, and several other breeds. Eating rabbit is common with many cultures.
I wouldn't be so concerned about the rabbits being sold as food as I would be about the general condition of the rabbits themselves.
BTW... I know this will rub some people the wrong way... but I would rather see a rabbit humanely slaughtered for food, than bought as a "pet" and then released a few months later in a park or on someone's farm and wind up as road kill or coyote food.

To some people a rabbit is a rabbit whether it be a meat rabbit or a fancy rabbit. Some large lops are used for meat as they are sometimes bigger than some meat breeds. The smaller rabbits don't give as much meat so there is no use in slaughtering them so most people won't, although I've seen some extremely large lops that would be great for meat. I guess it all depends on personal preference.

Lops aren't generally eaten. The big white rabbits with the pink eyes are bred for eating. Lop bunnies are usually kept as pets. We have 2 pet lop bunnies. We would never consider eating them.

Yes, they're just rabbits with floppy ears. The issue is (1) cost. Sometimes the cost of lops prices them out of the food market. and also (2) size. most people looking for rabbits to slaughter are looking for a large rabbit and lops may or may not be large enought to interest people.

Rabbits are like chicken pigs etc other animals ...
some are better for pets and other make good meat animals due to the way they grow...larger flanks more meat and less fat etc.
But the taste the same which is more dependant on the food
they eat.

Yes, it is possible to eat any rabbit so long as it is big enough.
