We don't even have Associate's Degrees in psychology in my state. Two-year colleges have only limited psychology courses--those who choose to major in psychology take the majority of their courses in their third and fourth years. Then they need to get a Master's Degree, and then--onto a PhD.
With an Associate's in psychology, you'd be lucky if you could be the receptionist in a psychologist's office--or even a small part of staff on a mental ward.

You can try and continue to get your PHD. It will be hard to get a job in the field of psychology with just an associates degree. Try a teaching assistant job.

Human service work (sometimes called a "psych tech" position) in a mental health setting. This position involves helping prepare activities and meals, leading games, etc. You will probably be supervised by a masters-level social worker and earn a dollar or two more an hour than minimum wage.

You can be a Mental Health Assistant. That person works with psych patients while they are in patient in a hospital.
