Virtually any rock can be mined by quarrying (open pit or strip), or by deep mining (under the surface). The ones listed above are good answers, but far from a complete list.
I am surprised no one mentioned coal. Although the term "quarrying" is not used with coal, coal is more associated with "strip mining", but the mining process is nearly the same.
The key is what can you quarry and make money selling? Limestone aggregate will sell for more in coastal areas where it does not exist, than in an area full of limestone valleys.

The largest limestone quarry in the world is in Thornton, IL (just south of Chicago)
