Going to be in Boulder for a conference and want to get in a weekend of skiing before hand. Looking for a resort suitable for an intermediate skier, with good apres ski.

Suggestions for hotels are also welcome. 3- or 4-star, near the lifts.

If your company is footing the bill, pick Copper Mountain and stay as close as possible. Copper features wide runs, that will allow you to avoid some intermediate skiers with ease.

If your company isn't footing the bill, stay at a hotel in Dillon, which is about 15 minutes down the road from Copper. It'll save you a ton of $$$ (though, during ski season... that may not mean much to your wallet!)

Eldora is the closest (21 miles). There is a bar in the lodge but I would just go up for the day and return to Boulder for apres ski. In fact there is regional bus service to Eldora from Boulder. Eldora has great intermediate terrain

Eldora is closest, but it is pretty small. You might want to head through Denver, up I-70 to Summit County - Keystone, Breckenridge, Copper Mountain and Arapahoe Basin (more advanced terrain) are all within 10-15 miles of each other, approx. 80 miles from Boulder. They're all good ski areas.

Depends on your idea of an easy drive, Vail is within 2 hours or so. There is a Marriot at Lionshead (Vail base area) within easy walking distance of the Lionshead gondola.
Steamboat is about 4 hours, there is a Sheraton right across from the Gondola. Apres ski at Steamboat probably pales a bit compared to Vail but it won't assault your wallet quite as badly. Vail is for the insanely rich, Steamboat it only helps if you're rich!
