I'm about to cook a great vegetable dish in the oven.
It's very simple and delicious: just chop in big chunks a variety of vegetables like white couliflowers, carrots, broccoli, a few aubergines and peppers. then add some olive oil, plus greated bread on top to form a nice crust and put in the oven.
To short-cut, you can boil a little bit the carrots and the couliflowers before putting them in the oven.
