Red Maples are good and hearty, grow fast.
This site talks about the native trees in the east Texas area, you could go to a nursery with this information and get a more personable explanation which would be better for you!

Lots of trees turn colors in the fall. Maple, oak, pear trees, are just a few examples. Part of the problem is the weather in E Tx staying warm until Dec. Sometimes trees dont change color and loose thier leaves until Jan.
I would recommend talking to people at your local nursery and see what they recommend.

How about a Chinese Pistache? Also know as a sumac. They have lots of color, look a little ferny and do not require a lot of water. I looked it up again and it was called a shade tree superstar for Texas.
