Let's assume that one week is from 12:00am Sunday to 11:59pm Saturday.

12:00am Sunday to Dawn Sunday = 1st Night
Sundown Sunday to Dawn Monday = 2nd Night
Sundown Monday to Dawn Tuesday = 3rd Night
Sundown Tuesday to Dawn Wednesday = 4th Night
Sundown Wednesday to Dawn Thursday = 5th Night
Sundown Thursday to Dawn Friday = 6th Night
Sundown Friday to Dawn Saturday = 7th Night
Sundown Saturday to 11:59pm Saturday = 8th Night

During that timespan, there are 8 nights that you encounter in a week if you begin and end counting in the middle of a night. If you add up the hours, they will total up to the time of 7 evenings. It depends on how you look at it.

If we look at this not in terms of days but in terms of hours then one week is 168 hours. If we call 8 hours of the 24 hour cycle the night and 16 hours the day. Then a week is made up of seven lots of 8 hour nights and seven lots of 16 hour days. Of course if your week starts at 12 midnight on the sunday and finishes at 11.59 (and 59 seconds) on the sunday then within that week there will be eight seperate experiences of nighttime as we know it (when it's dark). Nonetheless, the total will still be seven FULL nights.

well... if you think about it as monday night through sunday night, it's 7. But if you are only considering monday through sunday days, then it would be 6; mon night through sat night. So it depends on how you look at it
