Why put animals through it when over 96% die!!!

I assume you mean breeding across species. I honestly don't know why people think that's cool. It's usually done for aesthetic reasons, and I really can't think of any major advantages for doing it.

As for different breeds, that is often done for health reasons. As long as you have the same species, getting greater genetic variation will most of the time improve the fitness of the resulting progeny.

What do you mean 96% die? Perhaps you need a different word for your question. Cross breeding means breeding with unrelated animals. That is not breeding brother to sister, father to daughter, etc. It is the opposite of in-breeding.

To find a better breed of animal. People normally do it with dogs so that they can fulfill a job, just like rottweilers were made to be working dogs, Malamutes were made to pull sleighs. It may not be the best solution, but it is done.
