leave his cage door open and watch when you open doors that go outside and windows. He'll comem back eventually. Leave his food in his cage though.

Things that smell strong will make the best bait- peanut butter, cream cheese, honey flavored treat sticks from the store.
Your little guy probably hasn't gone far - make bucket traps by putting a bucket or trash can out with bait in the bottom, and a ramp leading up to the edge of the bucket.
Hamsters are wall huggers, so they will work better if you put your traps next to walls, bookcases or other places a hamster would normally scurry or hide.
Alternatively, if your hamster is male, you could borrow a female hamster of the same species from someone you know to bait your traps (leave her in a secure cage so that they don't mate). It might take a week or so for the female to go into heat, but it will bring him out of hiding.

What I did when this happened to me (they are escape artists!) is I got a bucket then built stairs with books up to the top of the bucket. Then I put his favorite treat in the bucket (sliced banana and strawberry). It caught that little guy!
You could also try putting a shoe box on the floor with a little nest of cotton. Cut a hole in the side and hope he makes a home in it. That worked for me once too, but the treat worked better.

most hamsters love dog biscuits what I would do is tie a light thread to it make it very long and a good color for you to see. Leave the cookie out and make sure its small enough for him to carry it where he is hiding, once you see the cookie is gone go look for the thread and there you will find your hammy.

Set up a see thru live mouse trap one that won't hurt him but will catch him alive set up a couple of them put peanut butter in them and check them every day, You can fid them on ebay. maybe your local store as well or make your own.
