Because first impressions are very strong. If you look like crap, seem uneducated, say offensive things, smell funny, or anything else that someone can attach judgment too, then your screwed. I don't like very many people I initially meet, and I'm very judgmental, but if I am forced to be around them enough and actually get to know them they are either really cool, and I feel like crap for hating them initially, or I really don't like them and hope I don't ever have to encounter them again. I think it's human nature.

It's only natural to make some assumptions, taken at face value. All our lives, we have been shaping and forming our opinions and outlooks on life and it naturally spills over into our social interactions. Nothing wrong at all. For instance, if I see a girl walking toward me wearing all black, with flaming red hair, piercings etc., I'll assume she was goth or emo. She may not be, but it's just an assumption based off experiences. If I see a guy wearing a cowboy hat, i'll assume he listens to country or maybe even drive a truck. If I see a woman at the bar wearing a shirt exposing her breasts, a too short skirt, stilettos and bleached hair, i'll assume she was there to pick up a guy, or otherwise promiscuous. I might be way off, but it's just what I see.
As long as we can have an open mind after meeting someone and can realize when we've made incorrect judgments, all is well.

Because you judged me before you knew me?
GO BACK AND READ YOUR QUESTION
Other words- Don't do something to me that you wouldn't want someone to do to you.
Maybe because your blaming all of us for what one bad person /s are doing to you.
Putting all that a side, it could be that certain person that is judging doesn't like him or her self. So anyone that might stand out in a crowd gets his anger taking out on them.
In your case you.
Please try not to judge all for some other person /s actions.
Have good night.

Because it is human nature, and yes it sucks. Everyone judges a person upon meeting, don't deny, you do. But it is all up to you if you want to listen to that voice in your head, or just simply introduce yourself to them and be nice from square one!

Because of perceived notions they pick up from their local environment. For example, my mother in law assumes a lot of things about black culture based on what she saw growing up.
