When it comes to time zones, what does GST mean? and what is the difference in relation to EST?

(ie. GMT = greenwich mean time; EST = easter standard time, etc...)

GST is guam standard time zone
EST is eastern standard Time Zone

If it is 10 am in washington on Thursday than it is 1 am in Guam on Friday Thus they are 15 hours ahead of us.
