They said to bring with me 3 months wage slips. Would this be any 3 months or most recent?

Most recent, but I've never known of anyone having to have a meeting to get a debit card. The bank can't lose money through as you will always be in credit.

I do not understand why you would need a meeting in order to get a debit card. I would have thought, all you had to do is fill out the application. In answer to you question: bring your most recent wage slips. If one of your most recent pay slips, show an irregularly small net earning, then bring an additional wage slip that reflects a more accurate average net earning. If you need to bring more pay slips that is okay, but do not bring less than required. If you have not received a pay slip, for one or more of the last 3 months, bring in the latest pay slips you have. Remember you are going to have to sell the banker on what ever excuse you have, as to the reason you have not received a pay slip for all of the 3 most recent months.

Bring the most recent 3 months, however if your pay is a lower than normal in any one of them bring previous months to back up your income. This will also let them see you are sharp in your understanding and will be credited to you.

My advice is find another bank. Some banks do credit checks for debit cards and checking account. Some banks do credit checks for just debit cards. Other banks just check telecheck or check systems for bad check writing.
