Mordor - Mordor does not use Uruk-Hai, instead they use orcs. Orcs used to be captured elves that got tortured and corrupted by Sauron.

Isengard - Saruman uses Uruk-Hai. They are a cross between orcs and goblins, giving them both the strength of orcs and the speed of goblins.

Mordor Uruks couldn't stand the sun, they were also differently armed and armored.

Saruman modified the Mordor Uruks, making them resistant to the sun, as well as giving them better armor and weapons. They were also taller, and had straighter backs and larger hands than Sauron's Uruks.

Saruman's Uruk-Hai were said to be half-orc half-man by Treebeard, but they were merely orcs, as Half-Orcs, which Saruman did have under his employ, are treated as separate from the Uruk-Hai by Tolkien himself.

I think the ones from mordor are the orcs and ones from isengard are called uruk'hai. Uruk'hais are like a genetic hybrid of the orcs. They are stronger and smarter than the orcs and I believe are capable of speech.

I'm not really sure but I think that's the difference

Uruks are smarter than the orcs it is like the orcs are programmed to do only one thing.
