So far, I know that we have taught apes, dolphins and parrots. What other animals?

Well, yes of course they have to understand what we are saying to them. Maybe even respond. Which are the most popular?

Seals, whales, birds, dogs, cats, pigs, monkeys, elephants, horses, donkeys, mules, otters, dolphins... i ran out....

If an animal spends enough time with a human, I think that nearly any of them will "communicate" back

Communication is a trait only of humans, at least as humans communicate. Animals can be trained to respond to certain vocal stimuli or a bell or a horn. Animals have to be rewarded for doing as instructed. Trained is the proper word. Not taught. It is NOT teaching. Only humans can teach, and then only other humans.

Trained animals learn body signs from humans. A dolphin may know that a trainers slum shoulders means it wont get any fish. Dolphins pick up on the changes in human voice. A quick high pitched voice may mean the dolphin gets a treat. But, dolphins don't in any way inform the human that it wants it's treat or fish NOW, not when the human chooses, but NOW.

Be careful what you watch on TV and the movies. Some people are only out to make money. If making money by selling animals as human like, works for these people, then they'll exploit it and the animals. Be aware that certain psychologist will say and do anything to sell a book or please potential clients.

Lots, people trains pigeons, pigs, dogs, and horses, but their communication skills are generally "inferior" than primates due to limited ability to adopt into human ways of communication.

Dogs are a big one...and maybe cats...besides that I really haven't heard of anything else besides the ones you got....

Communicate could mean several differenct things..
Do you mean by just reponding to to what we say(following roders) , or actually understanding what we ask of it
