cognitive comes from the latin word cognoscere which means to know. Knowing in the sense the there are reasoning powers behind the knowledge. so in short cognitive means the ability to reason or to think rationally.

There isn’t an accepted definition, this would be mine:
Cognition is the process you use to gather and analyze information.
The biggest difference between mine and the other definitions is I include gathering information as part of cognition.
