I want to know if in the sentence "There was only one type of cookie, so when you eat it every day it can grow old" SO is a conjunction.

so is a conjunction.

a conjunction can be split into two groups--subordinating and coordinating.

so is under the subordinating conjunctions, which is used in clauses only. eg, i was caught speeding so i was given a ticket.

coordinating conjunctions are used to join two sentences together. the list--and, but, or, nor, for, yet. eg, she went home early, for she felt sick.

It would be a Subordinating conjunctions, also called subordinators, are conjunctions that introduce a dependent clause;
English examples include after, although, if, unless, and because."because", "if", "so that", "after", "when", "although", "while", and "even though".
