For the Civil War, I would recommend The Red Badge of Courage.
For the 1st World War I would recommend Hemmingway's A Farewell to Arms.

For the civil war era, Gone With the Wind, of course. But also, Civil War, by Rita Mae Brown. There are some juvenile/young adult books that are excellent: Rifles for Watie, by Harold Keith, Across Five Aprils, by Irene Hunt, Shades of Gray, by Carolyn Reeder.
WWI, All Quiet on the Western Front, Bridge on the River Kwai
For WWII, how about Herman Wouk's trilogy, The Winds of War is the first.

The Killer Angels is a fabulous Civil War book. I'd recommend Band of Brothers for World War II.

Dear Future Zoomie: One book I enjoyed about WWII was James Michener's "Tales of the South Pacific." It deals with the lives of sailors and fliers in the SP, and how racism and prejudice can affect even intelligent people. Give it a try. It's a short one and an easy read.
