Is a continous concrete footing necessary, or is it acceptable to pour several piers in place of a complete footing?

Check with your local municipal building inspector. In PA, the ICC codes are followed. For a house, or an additional room on a house, we go with a continuous footing. For porches and decks, continuous footing or separate piers can be used. The code will provide size and spacing of the piers. The local building inspector can also provide the depth of the pier.

Yes, but depends on what your doing. Here in Minnesota many people use piers when the do additions like 3 or 4 season porches or rooms. They use the 12" round cardboard tubes to pour the concrete in and MN code requires we go 48-52" deep the get below the frost line of our winters. The number of piers you need will dpend on your room addition size and your local home center can probably answer that if you have a plan drawn up.

I would consult your construction official or architect, but I believe that you can do it in stages provided you don break up bearing footers and the rest is tied in using re bar.
