where did the phrase "jimmy crack corn" come from? and what does it mean?

There has been much conjecture over the meaning of "Jimmy Crack Corn and I don't care."
One possibility is "gimcrack corn," cheap corn whiskey; another related theory is that it refers to "cracking" open a jug of corn whisky.
Another interpretation is that "crack corn" came from the old English term "crack," meaning gossip, and that "cracking corn" was a traditional Shenandoah expression for "sitting around chitchatting."[

see the farmer Jimmy was bending over picking corn and his but crack was exposed. Thus the nickname Jimmy crack corn.

Jimmy Crack Corn

The song entitled "Jim Crack Corn" was written in 1846. It was published by the Virginia Minstrels, and was probably written by the northerner Daniel Emmett, who wrote a lot of the songs for their blackface minstrel show.

it is a song referring to slaves in a cornfield and the next part is "the master's gone away."
