Well, you could do it on somebody you admire. A family member, a friend, a movie or rockstar, an author, etc.
You could research something famous, such as Walt Disney, the eifell tower, leaning tower of pisa, etc.
One of my friends once did an essay on meth.
Um.....if you're interested in music you could do something related to that. Such as how a violen and chello differ or something.
