Well it would depend on the cooperation of the authorities/influence of the gangsters running it(them). Capone had several speakeasy's that ran 24/7 in Cicero Ill.

Speakeasy's were illegal. They choose the hours they wanted to be open as each decided what the "supply and demand" of their business was.

i dont know however i could imagine people wanted to drink a beer or whisky also during the day sometimes
