Quests are a very effective way to get XP and faction, a source for good gear, and, in some cases, are the source of certain skills. If you want to skip quests and just grind for XP, and get gear from the auction house or dungeons, you can do that, but you'll likely be at a little bit of a disadvantage.

On an individual level, you can skip certain quests without too much of an issue. Certain chain quests are required for, say, dungeon attunements at the higher levels, but most of them can be skipped without a problem.

You can do the quests to get you XP. Some quests are for new skills, such as the hunter quest, but besides that, no, you will not have to do quests if you do not want to.

You don't have to do quests, but it will take longer to level.

Just kill things constantly for XP (grinding)

or just run instances constantly.
