I;m going to have to break with the crowd here. THere is no fish traditionally served at Passover. Among ashkenazim a type of ground, deboned white fish boiled in its own bones is considerd a holiday delicacy, and it served by many, but it has no special conection to Passover. It's called Gefilte fish, which is Yidish for "stuffed," because they used to bake a whole fish with this kind of fish stuffed in the body cavity.
You should know certain Jews, like Vishnitz, do not eat fish at all on Passover.

Gefilte fish. It is not just for Passover; it is served year round, including at Passover. Guh-filta is the pronunciation.
It's actually a dish made from several different ingredients, including carp, which is the traditional fish used to make it (as is whitefish and pike). You cannot go fishing for Gefilte fish.
