I think it's time for a male perspective, since only women have answered so far.
Did you notice what you said in your question? You said: "I want him to be included..." and "I want him to have the experience..." Did you ask him if he wanted to be included?
There is a reason that showers were traditionally for women only, and that is because the vast majority of men don't enjoy going to them. He won't tell you this himself, because he loves you and think that this is important to you, but it is very likely that he does not want to spend the afternoon with a group of women and seeing how many onesies you get, even if it is for his baby. I'm not sure exactly when it became OK for men to attend baby/bridal showers, but it is strange.
I am married, and we are planning on having a child, and I will not be at the shower. My wife agrees with me, and thinks it's crazy to have men at a shower. I'll be somewhere else with my friends, bringing a few beers and doing something that men find fun. Absolutely none of the activities that were mentioned so far by any of the answerers were things that men would willingly participate in, especially the drinking from bottles and smelling candy bars in diapers. My suggestion would be to encourage him to get his friends together and do something that they enjoy that afternoon, let the women have their thing, and the men have theirs. Let them go somewhere where they can smoke cigars, drink beer, play cards or whatever your husband and his friends like to do.

All the co-ed baby showers I've had were BBQ types and the guys basically sauntered off to do their own things. Some played poker, others watch TV, and everyone enjoyed the food. If you want a more intergrated community, the games mentioned above seem great!

Games:: you take Candy Bars, and Melt them in diapers And people have to smell them and guess what kinda Candy bar they are..
Baby food games:: Take the Lables off 6-8 baby food jars,Give people little plastic spoons and they have to guess the kind of baby Food it is..
Clothes pin game:: Everyone Gets a baby pin or Clothes pin...Stick it on there clothes ....If anyone says the word "BABY" they get there Clothes pin taken away......The person at the end of the shower with the most clothes pins on (meaning caught the most people saying the word baby) wins a prize.
Co~ed baby showers are wonderful ideas,We did a baby shower for me..and in the same house My husband had a baby shower for men..It was a poker game where to get in on the table you had to bring either a can of the formula you will be using or a package of diapers..My Aunts threw the shower for me and my Uncles threw the poker game for him!
HAVE FUN!!!!!

Here are some games for the shower party. Have two people blind folded and have two dolls out in front of them. With diapers and baby cloth and who ever puts the babies clothes first wins a prize. Another game is have up to four players drink a bottle with juice or soda and who ever finish the first wins. Another game is have some cotton balls thrown on the floor and blind fold somebody and put a flat plate on their head and with the spoon try to put the cotton ball on the plate.Whoever has the most wins. One of my favorites is the cloths pin, you put them on a hanger and using only one hand try to get as many as you can without dropping any. I hope these ideas will help you.

I don't have any ideas but I just think your question is so cute! I love how you describe your husband as "the cutest first time dad to be out there"!!! I love it! That's how I feel about my husband too. It just made me smile to read that!
Best of luck!
PS. You could have a barbeque type shower (I've heard of that) of course that really only involves food...but what guys out there wouldn't want to come to a b-bq??? :) but no ideas about games or anything.

Get some small baby bottles and tons of cheap nipples and have a race between men, fill up about 2 or 3 oz and see who can drink the fastest..
The cotton ball game would be hilarious, especially watching men do it. Buy a big bag of cotton balls. Have two blindfolds, two big plastic bowls, two prs of oven mitts, and two ladles. You blindfold the men(or women) facing each other on the floor. Make them put onthe oven mitts, and hold the bowl in one hand and the ladle in the other. Spread all the cotton balls out in front of them both and give them a time limit of like 15 or 20 seconds to scoop up as many cottonballs as they can. It's hilarious, they have to try and scoop them up, blindfolded, and put them in their bowls with ladles. [Oh yeah, the most cottonballs in the bowl, wins!]
Priceless!

video it for him. trust me. i've been to a coed shower and it was so cheesy and awful and all of the guys were like caged animals until they snuck away and ended up drinking beer outside while they all tried to "figure out the grill". trust me, your husband may be awesome and cute, but he and his friends will NOT thank you if they have to play stupid shower games and ooh and aah over onesies. showers are totally girl things.
