If you turn it completely off, you won't have hot water to your shower, sink, etc. I would just turn it down a few degrees.

If this thing is responsible for all the hot water for your house, I keep mine set at 130 degrees year-round as I find it is still very hot, and the electric bill appears to have improved a little bit as well.

If, per chance, after you do this you start to run out of hot water often, you would then want to consider turning it up to 135 maybe even 140, but for summer 130 should be plenty hot, and I would leave it there for as long as you can stand saving energy lol.

Just turn down the thermostat, if the boiler is also used for hot water it will still do so, but hot water will not circulate through your heat radiators.

Use the thermastat, it controls the circulation pumps for heat.
