Sadly, even as an American, I've never asked a guy out before. What kinds of advice can I get on asking/telling a subtle, stifled German guy that I am interested?

It's surprisingly simple. Germans love women who know what they want. You can pretty much ask him out in no uncertain terms, and pretty much lead the way - they do wait for that, because they don't want to be seen as "macho" and tend to stay very subdued. German women act that way, anyway, so they won't even find it strange. I would just go for it.

Ask me instead,
for real ask him to lunch or dinner then invite him for a drink at your house,
or go on a couple of meals and go to your house.
