Very little information given in this question. If the range is very new, like a year or less, then there's a good possibility that the orifices in the burners are the only adjustment available. If it's older, 5 - 10 years or older, then the odds are that there are adjustable orifices on the backs of the burner controls. If you can lift the top up to clean under and around the burners, then look behind each burner control knob. If there's a hex shaped brass piece that the burner slips over when it's reinserted after cleaning, then you should be able to adjust the flames there. There's a similar adjustment on the gas valve in the oven. I don't remember which way, CW or CCW to turn to raise or lower, but it only takes a moment and one twist of the wrench to figure it out.

The flame heights are set at the factory. They're set at the levels that they are so that you can run all the burners and the oven at the same time with the amount of gas that flows into your house. There are minor adjustments that can be made but it's best to have a professional come out and do it. Call your local gas company.

use the knobs... BUT if it is out of control, it may have the nipple orafices in for natural gas, and you are probably running propane. you need to have the right nipples on the orafices to have the right amount of air/gas mix.
