Safety. Yellow is a standard warning color. Just like "floor wet" signs are yellow. Slow for school zone flashing lights are yellow. Even the "hey a red light is coming up" is a yellow light. Construction equipment is dangerous and therefore... yellow.

Because that is the company color of Caterpillar, the worlds largest manufacturer of construction equipment. John Deere equipment is green. All manufacturers will offer custom colors for a premium. Color has nothing to do with safety or visibility in this type of equipment. If you can't see or hear a bulldozer bearing down on you then you deserve to get squished.
