My burmese python does the same thing and i am not sure why he does it maybe it's because she wants to get warm, Does she normally bury her self in her vivarium? Try washing your hands before and after each time you hold her.
As for the eyes, Does the white eye seem cloudy??? If it does then it's probably a retained eye cap and a simple and easy fix is to grab your snakes head, but be very gentle and grab a piece of normal desk top scotch tape and stick it to your pants so that when you stick it to her it is not so sticky, stick it on the eye and very gently put at a side ways angle slowly, if it starts to lift off and everything is looking normal keep going until it comes off. If you start to see the eye bulging out when you pull the tape then stop and see your vet.
Tape is very dangerous for snakes do not let it touch any other part of the snake.
If you need me to explain this process better or if you are having trouble with the eye cap before you take her to the vet send me your email and i can email you my phone number and i will be glad to help!

Does it "peck" with its mouth open or closed?

Generally your snake will bump you as you are warmer than the environment, they are testing your heat, tasting your smell/skin, and trying to determine if you are a good source for warming/basking.

Since the heat sensors are located at the front of their face, they will "test" quite a few things with touch as well as tongue.

*edit*
With one eye being blue/white, how long has this been this way? Have you taken it to the vet to have it checked? It could be an incomplete shed and the eye cap may have been left behind. This can cause bacterial and fungal infections and render your python blind if not treated. If it is a congenital blindness or occlusion of sight, the "pecking" may be a response to the inability to see on that side (like you walking into a wall when it is late at night).

She is getting reddy to shed (you can tell that because of the eye) so it may sooth her irritated nose, or it may be curriouse abou you and it is her way of feeling you.
