Regarding plants, just make sure that they can tolerate full sun. The folks at your local nursery can really help you. Also, (with minimal costs and effort) install automatic drip irrigation. Lots of web sites (google: drip irrigation) to explain automatic irrigation, how it works and how to install. Very easy.

I grow my entire veggie garden, in 2' diameter plastic tubs, in the Central Valley of California (summers of 99% sun and a cool day is in the low 90's). It took a bit of experimentation to get the water timing right, and I do have to increase that time if it gets really hot (2 weeks last summer of over 110 degrees), but it is quite manageable. Especially with the time I save from other gardening chores; weeding, harvest, etc.

My greenhouse is also automatically irrigated, explosive orchid growth in late spring through mid-late summer.

You may not have enough soil in the planter or it may just be hot enough where you live to require water 2x per day. If they are clay pots they will dry out faster because it is porous.

i don't be attentive to approximately peppermint, yet i'm guessing Aloe demands much less water. Separate the two broadly and water subsequently. possibly you ought to get 2 shorter planters and plant one with aloe and the different with peppermint. (Aloe is a type of cactus.)

petunias are good, marigolds are great if you get full sun (they can tolerate the heat and dry conditions) also begonias (sp?) are a good hardy plant as well. just do your research first to determine what type of plant needs full sun and can tolerate dryer conditions if you don't want to be watering all the time.
