Sapphire is basically single crystals of corundum with impurities of transition metals. Pure corundum is a clear crystal. Saphhire and rubies are actually the same material, corundum, with different impurities in them. Blue sapphires have titanium in it. Rubies have chromium in it. You can end up with pink sapphires, which are basically corundum with chromium, but not enough to make it deep red to be called rubies. Corundum with iron impurities can look yellow. Now that you have sapphires of all three primary colors, you can end up with corundum with multiple impurities to give you yet even more colors. Sapphires can be green if it has titanium and iron impurities. It can be a deep orange if it has chromium and iron. I suppose it can look purple, although I've never seen a picture of purple sapphire.

Any color except for red. (If it's red it's a ruby).
