if you stick your thumb over the side of the glass it will break the surface tension and the bubbles wont go above the coke

Because the bubbles are the coke just carbonated if, you watch the glass for a moment you will notice that the bubbles disappear as the coke replaces it

Those aren't the bubbles you see, they're the remains of bubbles after they burst. The ones who happen to have exploded in a downward direction are the ones that reach the highest level above the surface.

They've built up speed from the bottom of the glass and erupted.
