Because the elements which make up the moon's surface have a grey colour. Much like many rocks on Earth, really.

We may think the moon is like a mirror. Sun lights shines on moon and come back to earth. We see that shining . Moon's rocks paint the sun lights grey for us.

The substances on the surface of the moon are poor reflectors of light. If not for the sun hitting it with such an incredible amount of light energy, we would probably see nothing. But if you shine enough light on even very dark surfaces, some light will reflect. That is what we see when we look at the moon.

its mainly due to the surface which is sandy.
you would think it would be fair coloured like ours but the moon has no air and the suns rays reach to the surface without any atmospheric filtering.
so the surface is constantly roasted by the sun and ends up just like ash in a fire which is also grey in colour.
