If you're traveling to Dubai for history, you'll be disappointed after day one. I was shocked by how little of old Dubai was preserved.
However, if you enjoy seeing history in the making or witnessing the building of a major international urban center rising from the sands then Dubai is the place to visit. It's spectacular to see what's under construction. I only wish they had a lecture series on the development.
For history, you're 20 years to late. Most of old Dubai was torn down to make way for new Dubai. There are a few historical buildings to take in. Near the Corniche and the Ruler's Court, the City has created a small version of a traditional gulf town. It's filled with art shops and restaurants. I recommend eating at the restaurant. If you're lucky they'll seat you in a private dinning room.
Also, the original Ruler's palace is nicely preserved and they have a museum that tries to capture gulf life prior to the oil boom.
In a few years there will be plenty to do in Dubai. There's over half a dozen major tourist projects under construction including Dubailand www.dubailand.ae .
With that said, in 2006 Dubai received 6 million visitors. By comparison, Egypt received just over 6 million visitors in 2005. The little city on the gulf has something going for it.
For now it's shopping, hanging at the beach, horse racing, falconry, clubbing, eating, and golf.
On a side note, I lived in Dubai for more than a year and I never had a bad meal. I can't say they same thing for NYC.
A 3-4 night visit to Dubai is sufficient. It's best to stay during their weekend which is Thursday, Friday, and Saturday. The city comes alive, there's more to do, and you'll have a better taste of gulf culture if you venture out.
There are moderately priced hotels in Dubai that won't break the bank.

Dubai is ok but I prefer Abu Dhabi.
If you are interested in Indian 24 carat gold then the Dubai Souk is the place to buy it.
Dubai is built up & very modern but history would be out of town
Some hotels are very expensive especially if you visit their bars as a tourist & buy a drink.
If you visit http://www.destinology.co.uk you may be able to find an offer to suit your price range.
The best time of year to visit this area is November - February otherwise it gets too hot.
If you want history, why not try Luxor in Egypt. It should be less expensive but remember it gets hot in our summer months.

There's LOADS to do. My sister moved out there 2 years ago, and neither she or I are uber-rich!! The Dorling Kinersly book about Dubai (the top ten ones are best) will give you plenty of ideas. But there are the souks - spice and gold, there is the castle, you can go for a ride down the dubai creek, visit the mosque (certain days only and WELL worth it), definately go for the desert safari - which is EXCELLENT, you can go ski-ing - (yes!!) you can lie on the beach, you can go walking, the shops are amazing! And we even went on the open top bus tour of Dubai to get our bearings and give us ideas. In conclusion, YES It's DEFINATELY well worth going!
You can find some stonking deals on line for hotel and flight packages.

I went for two days for my first wedding anniversary. We had a wonderful time (even though I'd got an upset stomach for the trip!) We stayed about 10 minutes away from the gold souks and hired our own water taxi and took a trip up and down the creek. Would like to go back and do more but we enjoyed what we did in the time we had. We also visited an old fort style museum.

You should be aware that 20% of all the tower cranes in the world are currently in Dubai.
An incredible statistic, but true. It's one vast building site.
