I like the moat at Nagoya Castle in Nagoya, Japan, but are there any other nice moats around? Thanks.

Bishops Castle in Somerset is awesome!

as is that at Leeds Castle, Kent http://www.leeds-castle.com/goto.php
Although not technically a castle the last I would mention is the Bishops Palace, Wells, Somerset. have a look at the picture at http://www.tonyhowell.co.uk/new/4467wells.htm This moat has swans who ring a bell when they want feeding.

If you stretch the definition of moat, then Mont St Michel in France might be worth looking at.

I would have to go with mont st Michele as well.. although yes it is sooort of streaching the definition
