Whenever I sing, it sounds great in my head, but when I hear myself on a recording, it sucks....horribly. The only real problem is that I'm very nasally when I sing, and I can only hear my head voice. I know that I am supposed to raise my soft palette, but I don't know how to do that. Please help.

to raise your soft palate, practice in front of a mirror. Watch yourself as you start to yawn. If you can recreate that lift feeling in your soft palate without yawning, then you can successfully use that in your singing. You must stay aware of it at all times, however, otherwise your sound will slip back up into your nose. Figuratively speaking. Continue to record and listen to the changes. Try not to listen to yourself while you're in the midst of singing, that gives that false impression of your voice.
Have you considered singing lessons? That is one area teachers are very good for, because they act as the recording does- an honest outside set of ears.
Best wishes
keep on singing

try plugging your nose while you sing for a while (in private if you want) just to help get you into the habbit of not using it to sing...
