I'm planning on becoming a pastry chef and i'd been wondering: Can a pastry Chef ever become a Sous Chef or Head chef?

Here is a site that will help you get some of your questions answered.
As you know it will take 2 years to get a degree with a specialty in one of the areas. You take more schooling to become proficient in other areas but the additional schooling and certificating. You could of course just study at your place of work but to change jobs you would need that dual certification to show province in both areas
