Lets take a stab at this.

C with 4 valence electrons
Iodine with 7
2 Flourine with 7
one extra electron

What ever happens, Carbon wants to finish with 8.

If Carbon most like forms single bonds with all of the Iodine and flourine atoms being they only need one valence electron.

that leaves one extra electron around the carbon paired with the remaining negative ion forms an unshared pair.

So one unshared pair and 3 single bonds.

that would be trigonal pyramidal if I am not mistakened
