If you needed the money but didn't care about getting the item back, do they still need your address?

My husband and I both sold our wedding rings to a pawn shop from our previous marriages but I don't remember them asking for our names or anything, but that was almost 6 years ago now.

Yes they keep it on file. But they won't track you down. If you don't pay back the loan on the item they will sell it. In california here, they give a list of all items received to the police dept daily to check against theft reports. In that case, they may track you down.

They have to hold your item for a certain amount of time to give you time to get it back. You give them your address so they can mail you a reminder.

If you don't pick it up after so long, they sell it. That's how they make their money.
