For fun shopping and nightlife, go to Greenbelt2 & 3 and Glorietta in Makati. You can also try going to Libis in Quezon City. The Podium in Ortigas is also a good place to just hang out.
The Baywalk in Manila Bay is also cool, you can watch some live bands perform and just enjoy the tropical and laid back ambiance.

At night in Ermita, Manila either Adriatico or at Baywalk Roxas Blvd specially during weekends (live band). In Greenbelt Makati, newly landscaped & constructed with bars & restaurants.
