Even though I spent most of the year at university, but my address changes at school because I keep having to move

yes. your parents address is still your primary address, and residence. if your kicked out of school (summer break) or move dorms it may be hard for them to track you.
it also doesn't look good for credit card companies. they always ask how long you have lived there... the longer the better...

I'm in college too and my checks have my mom's address on them.

I do not see what is the problem, as long as they are getting their money. just in case have something that have that adress under your name. I mean my checks do not even have an adress on it. or my name. really.
