Chess requires more thinking by far.
In chess, there are 6 different pieces that all move differently.
In checkers there are basically 2 pieces (regular checker and kinged checker).
Other than removing yourself from check, there are no absolutly forced moves in chess...some other moves are obviously dumb, but not absolutely forced.
In checkers, "jumps" are mandatory if available. This forcing of moves take lots of the thinking out of chess.
I could go on and on about why chess takes more thinking than checkers.

Totally chess. Checkers is easy to play and chess is more complicated.

Well you have to know which piece can move where in chess sooo confusing. Checkers isnt quite so bad.

with chess you have to wonder which piece can actually move certain ways, where with checkers, you only have to worry about which piece needs to move any way

Chess offers a wider variety of moves allowing for deeper planning and creativity.
I think that is the best way to answer your question.
In conclusion, we may ask, "Which way of making change would be the most fun?" I think the answer is obvious.
